My 2-year-old is about to move into a single bed, and I have no clue where to buy a mattress protector. If anyone could provide any leads, would be much appreciated!

I have a few mattress protectors made for my daughter's cot, at Sea Horse. They have a shop on Hennessy Road (opposite to Wanchai MTR station). They are of pretty good quality and price is reasonable.
