welcome to HK! Unless you have a maid recommended to you through personal sources, the best way to access a large database of maid CVs is to go through a maid agency (where you pay the agency a finder's fee once you have successfully hired a maid through them) OR go through the internet. I used 3 agencies (and to be fair they did send me credible maids to interview) but found my current helper through an ad posted by her on asiaxpat.com - good news is that I didn't have to pay the agency finder's fee.
You may find it hard to interview from overseas but you could speak to the agencies and get them to start shortlisting CVs for you, they can fax or email it to you and you could line up the helpers for interview the minute you land in HK. Another suggestion would be to do telephone interviews first and then shortlist those you'd like to meet with. Personally, I've always insisted on a verbal (not just a written) recommendation from the current or last employer as good maids always come with glowing recommendations!
