Friends have told me that most private doctors won't even see you if you are not planning to have them right up until the birth. I'm just 5 weeks pregnant, was going to register with a local hospital for check-ups before we leave HK early next year. Am I going to have to lie to them (ie say I'm giving birth here) to get appointments?

I saw a private doctor several times when I was using the public system, and there was no problem with that. The same principle, no? Otherwise just register at a public hospital. I don't recall having to explicitly say I was going to give birth here; I'd imagine they assume that from your ID card and the fact that you are pregnant and registering for care. Then just tell them you're moving when the time comes.
There are private doctors who will see you even if you are not delivering with them. Also you can use the public system for antenatal care even if you are not delivering with them - I may have been asked once where I planned to deliver (maybe because in their experience some Indian mums go back to India for delivery); at that time I planned to deliver with them. For my second baby, I explicitly told them I was undecided about where I was going to deliver and they said they don't have a problem if I deliver elsewhere. The public system is overloaded and I guess they'd be delighted if more people delivered elsewhere.
