Recipe: Vegetable & Coconut Korma

VEGETABLE & COCONUT KORMA
From 7months

Ingredients:
Small Onion
Tomato puree
Olive Oil
Medium sized carrot
Small Potato
Butter Beans
Ginger
Cumin
Tumeric Powder
Coriander Powder
Desiccated coconut

Method

1. Peel and chop 1 small onion and fry with a dessert spoon full of tomato puree, in a teaspoon of olive oil.

2. Peel and chop one medium sized carrot and one small potato.

3. Add to the frying pan with the onion and tomato and add 1 tablespoon of ready cooked butter beans.

4. Add a pinch of ginger, cumin, tumeric and coriander, with 2 teaspoons of desiccated coconut.

5. Add 4 tablespoons of water, bring to the boil and simmer for 20 minutes.

6. Puree roughly or mash ? texture should be slightly lumpy.

7. Add extra water if necessary.

Rani, this recipe is wicked! Shall try for my 7 month old and make an adult version for myself and the hubby! (I'm Sri Lankan, husband's Irish; curry is always a fun compromise) Thanks for sharing!
