Moving to HK, questions on living in Lantau / Saikung / Clear Water Bay.

I am moving with my family (2 children, 5 years old and 16 months) from Taiwan to HK soon (mid-November or mid-December) to work for 2 years as a postdoc at the University of HK.
My monthly salary will be 25000HKD.
In Taiwan, I am used to commute 2 hours a day and live in a small township in the countryside.
In HK, due to my tight budget, I assume I will have to live rather far from HKU in outlying islands or New Territories. Ideally, I am looking for a place rather green/quiet and as environmentally healthy as possible for young children. Proximity to an organic farm would be ideal.
I checked on http://www.squarefoot.com.hk/, rents not exceeding 8000/9000HKD for a size of at least 700 sq.ft..

I have short-listed a few locations:

- Lantau: Mui Wo, Tong Fuk village (would like to know more about other possibilities in Southern Lantau, and any update concerning the building of the incinerator in Shek Kwu Chau)
- Clear Water Bay
- Saikung

I have a few questions. I would be grateful if you could answer them:

1) Is there any traditional/old small house (with a backyard vegetable garden) to rent in the countryside?

2) Should I ship my car to HK if I live in Saikung?

3) Would you have recommendations concerning other locations?

4) I will visit HK for a week next week (from October 30th). I am looking for economic and green homestay in Lantau, Clear Water Bay and Saikung. Any suggestions?

5) Any recommendations regarding vegetarian restaurants in these places?
