Leaving helper in charge - legal + medical requirements?

If my husband and I were to leave our helper with our little one while we went to Macau for the night what do we have to do legally and medically?
Our doctor's surgery has given me a medical consent form to nominate my helper - I heard a story that a helper took a child to a hospital after an accident and was refused treatment as she had no proof of medical insurance.
Has anyone given their helper any other authorisations legal or medical?
 
This is really worrying. We havent left our child alone overnight before but certainly for a few hours when it would be difficult to get back quickly so if medical treatment were refused, there would be a real problem. What does the medical consent form include? Are most doctors surgeries aware of it?
 
We have left on several occasions the children in the care of our helper. We left the childrens insurancecard (BUPA) with her, emergency money (for taxi and medical payment just in case), a letter saying that in case of our deaths we want the children to be picked up by grandmother who then can take them home to Europe. Also we gave our helper some phone numbers of friends. So if she can't handle the situation (for example when she gets ill herself) she can call my friends here in HK and they can help her.

But this thread made me think so I will call Adventist hospital to hear for myself.
