hey i also love the combination. Once when i visited my friends aunt home she has served us. It will of great help if the recipe will be posted. Thanks in advance.
 
i was just thinking last night, as i ate bowlfuls of this wonderful curry.... "i don't think i ever posted the recipe..."

ok, here it is......


chicken fillets (we don't like bones in our house) cut into bite size pieces (you could even do this vegetarian and leave out the chicken!)

3 chinese eggplants sliced on an angle to make ovals

3 or 4 stalks lemongrass

2-3 small bunches of fresh corriander

1 large can coconut milk

1/2 brown onion (chopped)

1/2 tsp curry powder (if you want spicier, add more)

1 tsp minced garlic (we use the amoy garlic in oil)

1 tsp brown sugar

1 tsp apricot jam or marmalade

1 TBSP(ish) fish sauce

a few sprinkles of black pepper

1) fry the eggplant in oil until seared(remove)
2) fry the chicken separately until cooked(remove)
3) fry the curry powder in a little oil, add the garlic, onions & lemon grass.
4) add coconut milk to curry mixture
5) let it simmer and then add the chicken. let it simmer for 10-15 minutes.
6) add the jam, fish sauce, pepper, sugar & eggplant.
7) let it simmer until eggplant is tender
8) remove from heat and add fresh corriander as a garnish.


PLEASE REMEMBER..... my helper has made this SO many times that she doesn't follow a recipe any longer... she guesstimates the quantities. you may have to adjust them a little.
 
not really... as in not a thai "green curry" but the colour does come out somewhere between green and yellow.

my helper left us at the end of december and i DO MISS THIS CURRY!!!!!!!!!!!!!!!!!!!!!!
 
The recipe was great but definitely adjust to your taste...3-4 stalks of lemongrass was a bit much but it was DELICIOUS! Enjoy!
 
like i said, my helper made it so often, she never measured anything.... glad you liked it! i MISS it like crazy... just no time to cook it myself...
