Helper paperwork

I am in the process a hiring a helper.
We have all the paperwork signed. The helper will be taking it all to the embassy ect.
My question is, how do we ensure the helper doesn't look at our private info such as financial records?

You can't help it if she is going to submit the papers. We thought about the same thing, but because we weren't enthusiastic enough to go ourselves we let her do it and she may have looked into it.

You can eventually put all the papers in a sealed enveloppe, but I don't remember if she's not supposed to have a copy for herself, in that case.....

I put my financial info in a sealed envelope which was marked on the outside to indicate that it was the employer's financial records. After Immigration looked at it, they put it back in a sealed envelope addressed to me which was given to my helper to return to me. They even stamped the back of the envelope and taped it so that any tampering would have been evident.

Definitely put it an envelope and seal it. I didn't do this with our first helper, and from day 1 she started asking us for loans.
