helper needed from December

We will be moving from Shanghai to Hongkong (most probalby Discovery Bay) and we need an experienced domestic helper. We will be both working and need a reliable person to handle household in the morning and to take care of our boy (5) and girl (3) after school/kindergarden, starting from first of December. Phillipina is great, native Mandarin speaker as well - most important is experience in looking after Western kids.
Many thanks in advance for answers on following questions:
- we are not too keen on live-in, but heard that this is the only legal arrangement...?
- what is the appropriate monthly pay for 5 days (and one parents night out) per week?
- what's the best time to launch search? and - besides this forum - which media should we use?
