extra pay for working on a pub holiday?

Hi,

This Sat is a public holiday for helpers but we'd like to ask our helper to work extra. Do you know if it's possible to do that if we offer extra pay for them? If so what's the going rate?

Legally, you can't. By law, you're obliged to give her an extra day off within the week if you asked her to work on a stat holiday.

But, the reality of course, is different. Lots of people (locals and expats) do it. Some will pay standard wages, some will pay standard wages + extra for the inconvenience.
