Eggy bread & Mayo

Another idea to throw into the mix is pita bread pizzas...my son loves making his own i.e tomato sauce/ketchup and olive oil base, onions, mushroom, corn, tuna (whatever we have in really) and of course the best bit, grating cheese on top on baking it at 180 degrees celcius for 5 - 10 mins.

This is a good one for those guilty days when I really havent done much with him - he feels important having 'made lunch' ...now if only he had the hand eye coordination for doing the dishes :)
 
What else can I serve my 21 month old for lunch as I now only want to give him one proper hot meat meal for his evening meal (we used to give him another hot meal for lunch too - soup or another meat meal)? I am currently doing sandwiches and fruit or toast and fruit. Any other ideas? [PS he has cereal and fruit for breakfast]
 
i guess it would depend on what you consider "hot"... for us, mac & cheese is VERY popular for lunch.
 
Strangely I think "lucmas" has accidentally quoted my original message above.

Do you make mac and cheese from scratch? I am used to macaroni cheese (pasta in cheese sauce with onion, bacon and sometimes tomato then baked in the oven) which I assume is the same as Canadian mac and cheese?
 
nah.... we use kraft dinner, with extra cheese, often pureed carrot or cauliflower....

we also do it like lasagne... instead of lasagne noodles, we use macaroni and do a "baked" dish... OH! so YUMMY! (for mummy, too!)
 
and we've tried homemade mac & cheese... we all preferred the boxed stuff (with added REAL cheese!)...LOL! guess it's what you're used to...
