Confusing fees for hospitals

Hi everyone,
I am finding private health care very confusing. We have just arrived from UK and are used to the NHS.

I have found Dr Dawkins through various recommendations and intend to use him as my doctor after my first visit. I also want to use the Matilda hospital, do I need to book the room that I want directly with them or do I do this through the doctor. I have also been recommended the Annerley midwives which I am also very keen to use, however, I can't get a straight answer from the insurance company about whether I am covered. Help
