I am not sure the correct way to spell these chinese words in english and hoping someone can help me.

Lai see (red pockets)

Fong Che (the wind pin wheel things people carry around during new years)

Tse see (lion dance)

Sung choy? or choi cheng? (lions eating the cabbage and spitting it out)
 
lai see you have right...not sure of the rest.

there are so many ways to spell cantonese words anyway, it can get very confusing.

not bad at all !!

There really is no standard way of spelling cantonese words in English as carang says, but I would say you have got lai see and fong che right.

lion dance would be "mo see" in cantonese, and Choi Cheng would describe the lion grabbing the lettuce and spitting it out. Sang Choi would be cantonese for the actual lettuce itself.
